Smoked Charcuterie Meats

A simple way to elevate a grazing board, these smoked small meats add rich flavour and a premium finishing touch to charcuterie spreads and entertaining platters.

Ingredients

  • Assorted small meats (prosciutto, salami, chorizo, sausage)
  • Assorted cheeses
  • Crackers and bread
  • Fresh fruit (figs, grapes, apple slices)
  • Olives and pickles
  • Nuts (almonds, walnuts, pecans)
  • Wood chips (apple, cherry, or hickory recommended)

Method

  1. Arrange the assorted small meats on a large charcuterie board or serving platter.
  2. Fill out the board with cheeses, crackers, bread, fruit, olives, pickles, and nuts.
  3. Select the meats you want to smoke and place them into your smoker.
  4. Add a small amount of wood chips.
  5. Infuse with smoke for at least 5 minutes.
  6. Return the smoked meats to the board and arrange everything neatly for serving.
  7. Serve immediately while the smoky aroma is still fresh.
