Ingredients

  • 8 oz dark chocolate, chopped
  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Wood chips (cherry or apple recommended)

Method

  1. Melt the dark chocolate in a heatproof bowl over simmering water, then set aside to cool slightly.
  2. Beat the egg yolks with the sugar until creamy.
  3. Stir the melted chocolate and vanilla extract into the yolk mixture.
  4. Whip the egg whites to stiff peaks.
  5. Fold the whipped egg whites gently into the chocolate mixture.
  6. In a separate bowl, whip the heavy cream to soft peaks.
  7. Fold the whipped cream into the mixture until smooth and airy.
  8. Spoon the mousse into serving glasses and refrigerate for at least 2 hours.
  9. Before serving, place the glasses into your smoker and add a small amount of wood chips.
  10. Infuse with smoke for 1–2 minutes.
  11. Serve immediately for the best flavour and presentation.
