Smoked Deviled Eggs
A simple classic with a smoky twist, these smoked deviled eggs are perfect for entertaining, grazing tables, and party platters.
Ingredients
- 6 large eggs
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp white vinegar
- Salt and pepper to taste
- Paprika, for garnish
- Wood chips (apple or cherry recommended)
Method
- Place the eggs in a saucepan and cover with water.
- Bring to a boil, then remove from heat, cover, and let sit for 12 minutes.
- Transfer the eggs to ice water and allow them to cool fully.
- Peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Mash the yolks, then mix with mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.
- Spoon or pipe the filling back into the egg whites.
- Place the eggs into your smoker and add a small amount of wood chips.
- Infuse with smoke for about 5 minutes.
- Finish with a light sprinkle of paprika and serve immediately.
