Smoked Deviled Eggs

A simple classic with a smoky twist, these smoked deviled eggs are perfect for entertaining, grazing tables, and party platters.

Ingredients

  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white vinegar
  • Salt and pepper to taste
  • Paprika, for garnish
  • Wood chips (apple or cherry recommended)

Method

  1. Place the eggs in a saucepan and cover with water.
  2. Bring to a boil, then remove from heat, cover, and let sit for 12 minutes.
  3. Transfer the eggs to ice water and allow them to cool fully.
  4. Peel the eggs and slice them in half lengthwise.
  5. Remove the yolks and place them in a bowl.
  6. Mash the yolks, then mix with mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.
  7. Spoon or pipe the filling back into the egg whites.
  8. Place the eggs into your smoker and add a small amount of wood chips.
  9. Infuse with smoke for about 5 minutes.
  10. Finish with a light sprinkle of paprika and serve immediately.
