Smoked Olives
A simple, flavour-packed appetizer with a smoky twist, these smoked olives are perfect for entertaining, grazing boards, or adding something unexpected to the table.
Ingredients
- 2 cups mixed olives (green, black, or Kalamata)
- 2 cloves garlic, thinly sliced
- 2 tbsp olive oil
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme, chopped
- Zest of 1 lemon
- Wood chips (oak or hickory recommended)
Method
- In a bowl, combine the olives, garlic, olive oil, rosemary, thyme, and lemon zest.
- Toss well until everything is evenly coated.
- Transfer the olives to a small dish or tray suitable for smoking.
- Place the dish into your smoker and add a small amount of wood chips.
- Infuse with smoke for about 5 minutes.
- Serve immediately as an appetizer, or add to grazing boards, salads, or antipasto-style platters.
