Smoked Olives

A simple, flavour-packed appetizer with a smoky twist, these smoked olives are perfect for entertaining, grazing boards, or adding something unexpected to the table.

Ingredients

  • 2 cups mixed olives (green, black, or Kalamata)
  • 2 cloves garlic, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • Zest of 1 lemon
  • Wood chips (oak or hickory recommended)

Method

  1. In a bowl, combine the olives, garlic, olive oil, rosemary, thyme, and lemon zest.
  2. Toss well until everything is evenly coated.
  3. Transfer the olives to a small dish or tray suitable for smoking.
  4. Place the dish into your smoker and add a small amount of wood chips.
  5. Infuse with smoke for about 5 minutes.
  6. Serve immediately as an appetizer, or add to grazing boards, salads, or antipasto-style platters.
